Teriyaki Veggie Stir Fry is a delicious, light dinner with full of fresh, colorful vegetables and very easy to make!
We recently had a great cycle trip to the |Netherlands, and we had a delicious Teriyaki veggie stir fly at an outlet mall in Ruremond. It was so delicious that we had to go back again to enjoy the meal. After getting inspired by the delicious veggies with teriyaki sauce, I also tried to make the same at home and it went very well.
All you need for 2 persons is...
1 tbs of mustard seeds
3 sticks of celery ,..finely shred
1 Red or yellow capsicum..finely shred
2 carrots ...julienned
1 eggplant.. cut into narrow strips
1/2 Broccori ..cut into small pieces
You can add some mushrooms if you like.
130g Cooked Jasmin rice

Method (15mins )....
1.Heat a large frying pan over medium-high heat and then add some cooking oil
2. Let the oil heat up for 1-2 minutes.Then add mustard seeds,
and all the vegetables to the pan and saute for 5 minutes. When the vegetables are slightly tender, add a little bit of water and cover with a lid.
3. Continue cooking for another 5 minutes, then add the Teriyaki sauce and stir well for another 5 mins.
4. Serve with a rice immediately.
