Oshiroko is a sweet red bean soup with rice cake which is commonly eaten in winter and as New Year's dessert.
Sweet red bean soup has been popular winter dessert throughout Asia. It's called " Oshiruko" in Japanese and " hong dou tang" in China, Taiwan and Hong Kong.
Today's red bean sweet dessert is Japanese style. You can also make with rice cake or without it.
Ingredients ( for 4 people )
・180g dried Azuki beans
・80 to 150g can sugar (depending on how sweet you would like)
・4 cups of water
・Baked rice cakes ( optional )
・1 pinch of salt

1. Soak the red beans overnight. 8-10 hours in summer time . 10-12 hours in winter time.
2. Wash and drain the beans. Then, transfer to a medium pot.
3. Add water until the beans are fully covered and bring it to a boil with medium heat.
4. After beans are boiled and drain water.
5. Add 4 cups of water and cook beans about 40 mins with low heat.
6. After the beans are soften, use an immersion blender to blend until the beans becomes mushy.
7. Add the can sugar and bring it a boil again for 5 mins.
Skim the foam from the surface.
8. Add pinch of salt and remove pot from heat.
9. Grill rice cakes and ladle sweet soup into bowl and add grilled rice cake.
10. Oshiruko is ready!
