Making fresh Vietnamese Spring rolls is great idea for your appetizer, lunch or dinner. It's fresh and healthy, full of veggies, gluten free and looking amazing too ! There are so many variations you could try - vegetarian rolls with fresh herbs, avocado and cream cheese rolls or avocado and smoke salmon rolls... you name it !
Here is how I made today for today's lunch.
1. Start by preparing vegetables you would like to use. I prepared organic lettuce, cucumber, bio smoked salmon this time.
2. Soften the rice papers. Dip rice paper sheets one at a time in a pan of hot water just for a few seconds. Place refreshed rice paper on a cutting board.
3. Place a small portion of the lettuce, cucumber, smoked salmon on the bottom third of the sheet, and roll up gently, folding in the sides of the rice paper as you roll.
4. Keep continuing the same things for another rolls.
4. And made vegetarian rolls as well !
