I love cooking Indian cuisine as I find it healthy, ( Especially homemade south Indian curries are not oily and very healthy!) and I enjoy cooking Indian meals as it brings me back good memories of India . I think for most of people who have never been to India, Indian food is just spicy curry, but it is actually not. What I can say is there is no one typical Indian cuisine, but many variations, both regional and religious. I could say one of the Indian dishes non-Indians love the most is Baingan Bharta .
Baingan Bharta is a delicious side-dish originated from Punjab area of India.( I cooked Baingan Bharta as main dish this time as it can very easily become a main dish when you add more eggplants.)
Ingredients( for 4 people)
3 large sized eggplant ( 7-8 eggplants if they are small)
1/2 tsp oil for greasing
1 tbsp ghee if you have, or 1 tbsp oil
1/2 sliced onions
1/2 1 chopped tomatoes
2 tsp grated garlic
2 tsp grated ginger
200 cc water
2 tsp salt to taste
All the spicies you need
1 tsp cumin seeds (jeera)
1 tbsp coriander powder
1/2 tsp turmeric powder
1/2 tsp red pepper
1/2 tsp black pepper
* 1/2 tsp garam masala ( add at the end)
1. Grease the eggplants with oil and roast it over an open flame till it is cooked. Cool and peel the skin.
Mash the pulp thoroughly and keep aside.
2. Heat the ghee or the oil in a pan and add the cumin seeds.
3. After the cumin seeds crack add the chopped onions and fry for 5 minutes, then add the ginger and garlic and stir for another a few minutes.
4. Add the tomatoes and cook for 2 -3 mins and cook until tomatoes are tender and mushy.
5. Add all the spices except garam masala and mix very well for 2 mins, then add the water and cook for another 5 mins.
6. Add the mashed eggplants and salt. Mix them well for 3-4 mins.
7. Add garam masala and cook for 3 mins
8. Baingan Bharta is ready! You can add chopped coriander leaves ( optional ) Serve with any type of Indian breads or Jasmine rice.
